Corn Jam Ice Cream
This is by far my favorite ice cream I've ever made. When I was invited to a corn themed party (crazy) by my girlfriend, the decision was made for me that I was gonna recreate the sweet corn raspberry jam from this creamery in Cambridge.

The ice cream really surprised me. I cannot write a real recipe to this for obligatory reasons, but you'll figure it out if you make it.
I modified this recipe for Philadelphia style ice cream base, but I had to remove some of the sugar since we were adding brown sugar roasted kernels.

...also maybe some of the salt? But I added more salt during churning so none of this really matters I can't even look at the news anymore without crying.
Since I couldn't find raspberry jam at Stoppy's, I took some strawberry jam and added lemon juice to make it tart. ZOMG this was so delicious. I would recommended making it pretty tart and making sure it's well distributed in the ice cream. Also go pretty liberal with it. Yeah it's that good.
I blended the base to incorporate the corn, and after I just eyeballed the correct amount of liquids to add. While that chilled I played catfishing:

During the churning, Aerin recommended I stir in some whole kernels that I had left over. This was a great idea since it some a nice textural contrast. I then whipped in some of the jam right at the end.

This was a big hit at the corn party and everyone loved me I made so many friends and shared so many laughs.
Also I wrote this blog post in like 20 minutes and just realized I downed an entire pint of HΓ€agen-Dazs within that time.
My next goal is to perfect my honey mustard ice cream recipe.
